Method

Prepare the Protein or Falafel

For Ground Lamb

In a bowl, combine ground lamb with cumin, paprika, garlic powder, salt, and black pepper. Mix well until all ingredients are incorporated.

For Falafel

In a food processor, combine chickpeas, parsley, garlic, cumin, coriander, salt, black pepper, baking powder, and flour. Blend until a coarse mixture is formed. Shape into small balls or patties.

Make Tzatziki Sauce

Prepare the Sauce

Grate the cucumber and squeeze out excess water. In a bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt. Mix well and refrigerate until serving.

Prepare Vegetables

Chop the Vegetables

Slice the red onion, cucumber, and tomato. Shred the lettuce. Set aside for assembly.

Cook Fries

Prepare Fries

Cook frozen fries according to package instructions until crispy and golden brown.

Assemble the Gyro

Build the Gyro

In a pita or flatbread, layer the protein (lamb or falafel), tzatziki sauce, chopped vegetables, and crumbled feta cheese. Serve with a side of fries.
