Marinate the Chicken
In a large bowl, combine buttermilk, hot sauce, paprika, garlic powder, salt, and black pepper. Whisk until smooth. Add chicken thighs, making sure they are fully submerged in the marinade. Cover and refrigerate for at least 4 hours or overnight.

Fry the Chicken
Heat oil in a deep skillet or fryer to 350°F (175°C). Remove chicken from marinade, allowing excess to drip off. Fry chicken in batches for about 6-8 minutes, or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the House Sauce
In a small bowl, mix together additional hot sauce and mayonnaise (to taste) to create a spicy house sauce. Adjust the heat level by adding more hot sauce if desired.

Assemble the Sandwich
To serve, place fried chicken on a toasted brioche bun. Top with house sauce, sliced pickles, and slaw. Close the bun and enjoy!
