Marinate the Chicken
In a large bowl, combine the buttermilk, salt, black pepper, and hot sauce. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Coating
In a shallow dish, mix the flour, cayenne pepper, paprika, garlic powder, onion powder, and a pinch of salt. Set aside.

Heat the Oil
In a large skillet or deep fryer, heat the cooking oil over medium-high heat until it reaches 350°F (175°C).

Coat the Chicken
Remove the chicken from the marinade, allowing excess liquid to drip off. Dredge each piece in the flour mixture, pressing to adhere. Shake off any excess flour.

Fry the Chicken
Carefully place the coated chicken thighs into the hot oil. Fry for about 6-8 minutes per side, or until golden brown and cooked through. Remove from oil and drain on paper towels.

Make the Spicy Sauce
In a small bowl, combine additional cayenne pepper (to taste) with some of the leftover frying oil to create the signature spicy sauce.

Assemble the Sandwich
Spread mayonnaise mixed with apple cider vinegar on the brioche buns. Place fried chicken on each bun, drizzle with the spicy sauce, and top with pickles and coleslaw mix.
