Prepare the Chicken
In a large bowl, combine buttermilk, cayenne pepper, paprika, garlic powder, salt, and black pepper. Add the chicken thighs, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

Breading the Chicken
In a separate bowl, add the all-purpose flour. Remove the marinated chicken from the refrigerator and let any excess marinade drip off. Dredge each piece of chicken in the flour, shaking off the excess flour.

Frying the Chicken
In a large skillet, heat oil over medium-high heat. Once hot, add the breaded chicken thighs and fry for about 5-7 minutes per side, or until golden brown and cooked through. Remove the chicken and place on paper towels to drain excess oil.

Assemble the Sandwich
Toast the brioche buns lightly. Place a piece of fried chicken on the bottom half of each bun. Drizzle generously with the house sauce (recipe below). Top with pickles and the other half of the bun.
