    Prepare the Potatoes

    Wash and peel the Russet potatoes. Using a mandoline slicer or a sharp knife, slice the potatoes thinly (about 1/8 inch thick).

    Soak the Potatoes

    Place the potato slices in a bowl of cold water and let them soak for about 30 minutes to remove excess starch.

    Dry the Potatoes

    Drain the potatoes and pat them dry with paper towels to remove as much moisture as possible.

    Heat the Oil

    In a deep frying pan or large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chips

    Carefully add a handful of the potato slices to the hot oil, being careful not to overcrowd the pan. Fry for about 3-4 minutes or until golden brown and crispy.

    Drain and Season

    Use a slotted spoon to remove the chips and transfer them to a plate lined with paper towels to drain excess oil. While still hot, sprinkle with sea salt, paprika, garlic powder, and black pepper to taste.
