Prepare the Fries
Preheat your oven to 425°F (220°C). Cut the potatoes into thin strips and soak them in cold water for 30 minutes. Drain and pat dry.

Season the Fries
In a large bowl, toss the potato strips with olive oil, paprika, garlic powder, salt, and black pepper until evenly coated.

Bake the Fries
Spread the seasoned fries in a single layer on a baking sheet and bake for 25-30 minutes, flipping halfway through, until golden and crispy.

Add Cheese
Remove from heat and stir in the cheddar cheese, cream cheese, and hot sauce until melted and creamy.

Assemble
Once the fries are done, transfer them to a serving platter and generously drizzle the cheese sauce over the top. Serve immediately.
