Soak the Noodles

In a large bowl, soak the rice noodles in hot water for about 30 minutes or until softened. Drain and set aside.

Prepare the Sauce

In a small bowl, mix the fish sauce, tamarind paste, sugar, and soy sauce until well combined. Set aside.

Cooking

Cook the Shrimp

In a large skillet or wok over medium-high heat, add a splash of oil. Once hot, add the shrimp and cook until pink and opaque (about 2-3 minutes). Remove from the skillet and set aside.

Scramble the Eggs

In the same skillet, crack the eggs and scramble them until fully cooked. Remove and set aside with the shrimp.

Sauté the Vegetables

Add a little more oil to the skillet if necessary. Add minced garlic and chopped green onions, sautéing for about 1 minute until fragrant.

Combine Ingredients

Add the soaked noodles to the skillet along with the prepared sauce. Toss everything together until the noodles are coated and heated through.

Add Shrimp and Eggs

Return the cooked shrimp and scrambled eggs to the skillet. Toss in the bean sprouts and mix well for an additional 2 minutes.

Serving

Garnish and Serve

Remove from heat, garnish with crushed peanuts and chopped cilantro. Serve with lime wedges on the side.
