Preparing the Broth
1. Roast the Aromatics
Cut the onion in half and slice the ginger. Place both on a baking sheet and roast in a preheated oven at 200°C (392°F) for about 10-15 minutes until slightly charred.
2. Simmer the Broth
In a large pot, add the beef bones and water. Bring to a boil, then skim off any foam. Add the roasted onion, ginger, star anise, cinnamon stick, and cloves. Lower the heat and let it simmer for at least 4 hours, skimming occasionally.
3. Season the Broth
After simmering, strain the broth to remove solids. Return the broth to the pot and season with fish sauce and salt to taste. Keep warm.
Preparing the Noodles and Toppings
4. Cook the Rice Noodles
Bring a pot of water to a boil. Add the rice noodles and cook according to package instructions, usually around 5-7 minutes. Drain and rinse under cold water to stop cooking.
5. Prepare the Beef
Thinly slice the beef sirloin or brisket against the grain. You can also choose to briefly blanch the beef in the hot broth if you prefer it cooked.
6. Prepare the Garnishes
Rinse and chop the fresh herbs, slice the lime into wedges, and chop the green onions. Set aside with bean sprouts and jalapeños.
Assemble the Pho
7. Combine Ingredients
In a large bowl, add a portion of the cooked rice noodles. Top with sliced beef, fresh herbs, bean sprouts, jalapeños, and green onions.
8. Pour the Broth
Ladle the hot broth over the assembled ingredients in the bowl. Squeeze lime juice over the top.
9. Serve
Serve immediately while hot, and enjoy your homemade Pho!
