1. Prepare the Vegetables
Wash and dry all the vegetables thoroughly. Chop the mixed greens, slice the cherry tomatoes in half, peel and slice the cucumber, dice the red bell pepper, grate or julienne the carrot, and cube the avocado.
2. Make the Dressing
In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper until well combined.
3. Combine Ingredients
In a large mixing bowl, combine the mixed greens, chopped vegetables, and fresh herbs. If using, add the feta cheese.
4. Dress the Salad
Drizzle the dressing over the salad and toss gently to combine everything evenly.
5. Serve
Transfer the salad to serving plates or bowls and enjoy fresh!
