Prepare the Pork
Trim any excess fat from the pork tenderloin and slice it into 1-inch thick medallions.
Set Up Breading Station
In three separate shallow dishes, place the flour seasoned with salt, pepper, garlic powder, and paprika in one, beaten eggs in the second, and breadcrumbs in the third.
Bread the Pork
Dredge each pork medallion in the flour, shaking off excess, then dip into the beaten eggs, and finally press into the breadcrumbs until fully coated.
Heat Oil
In a large skillet, heat vegetable oil over medium-high heat until hot.
Fry the Pork
Add the breaded pork medallions to the skillet in batches, making sure not to overcrowd. Fry for about 3-4 minutes on each side or until golden brown and cooked through.
Drain and Serve
Once cooked, remove the pork from the skillet and drain on paper towels. Serve hot.
