Prepare the Vegetables
Julienne the carrot and zucchini. Sauté each vegetable separately in a tablespoon of vegetable oil until tender. Set aside.

Cook the Spinach and Mushrooms
Blanch the spinach in boiling water for 1 minute, then rinse under cold water. Squeeze out excess water and chop. Sauté the mushrooms in a tablespoon of vegetable oil until soft. Set aside.

Fry the Eggs
In a frying pan, heat a tablespoon of vegetable oil over medium heat. Crack the eggs and fry until the whites are set but the yolks are still runny. Remove from heat.

Assemble the Bibimbap
In a large bowl, place a serving of cooked rice at the bottom. Arrange the sautéed vegetables, spinach, and mushrooms on top of the rice. Place the fried eggs in the center.

Add the Sauce
Drizzle the gochujang, soy sauce, and sesame oil over the assembled ingredients. Sprinkle with sesame seeds and add salt to taste.
