Method

Pie Crust Preparation

  1. 1

    Make the Dough

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

  2. 2

    Add Water

Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Do not overwork the dough.

  3. 3

    Chill

Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.

Filling Preparation

  1. 4

    Prepare the Fruit

Wash and slice the fresh fruit of your choice. If using apples, peel and core them.

  2. 5

    Mix the Filling

In a large bowl, combine the sliced fruit, granulated sugar, cornstarch, cinnamon, and lemon juice. Toss until the fruit is evenly coated.

Pie Assembly

  1. 6

    Roll Out the Dough

Preheat your oven to 425°F (220°C). Roll out the chilled pie dough on a floured surface to fit your pie dish.

  2. 7

    Fill the Pie

Place the rolled-out dough into the pie dish. Pour the fruit filling into the crust and dot with small pieces of butter.

  3. 8

    Cover the Pie

Roll out another layer of pie dough for the top crust. Place it over the filling, and seal the edges by crimping with your fingers or a fork. Cut slits in the top crust to allow steam to escape.

Finishing Touches

  1. 9

    Apply Egg Wash

In a small bowl, whisk together the egg and milk. Brush this mixture over the top crust for a golden finish.

  2. 10

    Bake

Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.

  3. 11

    Cool and Serve

Allow the pie to cool on a wire rack for at least 15 minutes before slicing. Serve warm or at room temperature.
