1. Marinate the Chicken

In a large bowl, combine the plain yogurt, minced garlic, grated ginger, lemon juice, ground cumin, paprika, salt, black pepper, and olive oil. Mix until well combined.

2. Add Chicken

Add the chicken thighs to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight for best flavor.

3. Preheat the Grill

Preheat your grill to medium-high heat (about 400°F or 200°C).

4. Grill the Chicken

Remove the chicken from the marinade, allowing excess marinade to drip off. Place the chicken skin-side down on the grill. Grill for about 7-10 minutes until the skin is crispy and golden.

5. Flip and Cook

Flip the chicken thighs and grill for another 7-10 minutes, or until the internal temperature reaches 165°F (75°C).

6. Rest the Chicken

Once cooked, remove the chicken from the grill and let it rest for about 5 minutes.

7. Serve

Serve the grilled chicken with lemon wedges and sprinkle with chopped parsley for garnish.
