Crust

Method

Crust

  1. 1

    Prepare the crust

Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs and granulated sugar. Melt the unsalted butter and pour it into the crumb mixture, mixing until evenly combined.

  2. 2

    Form the crust

Press the crumb mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake in the preheated oven for about 10 minutes, or until lightly golden. Remove from the oven and let it cool.

Filling

  1. 3

    Prepare the filling

In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar, mixing until fully incorporated.

  2. 4

    Add sour cream and vanilla

Add the sour cream and vanilla extract to the cream cheese mixture, mixing until smooth.

  3. 5

    Incorporate the eggs

Add the eggs one at a time, mixing on low speed until just combined after each addition. Be careful not to overmix.

  4. 6

    Pour into crust

Pour the filling into the cooled crust, smoothing the top with a spatula. Bake in the oven for 50-60 minutes, or until the center is set but still slightly jiggly.

  5. 7

    Cool the cheesecake

Turn off the oven, crack the oven door, and let the cheesecake cool inside for 1 hour. Then, refrigerate for at least 4 hours, preferably overnight.

Topping

  1. 8

    Prepare the topping

While the cheesecake is cooling, wash and slice the fresh strawberries. In a bowl, combine the strawberries with granulated sugar and lemon juice. Let it sit for about 15 minutes to allow the strawberries to macerate.

  2. 9

    Serve the cheesecake

Once the cheesecake is fully chilled, remove it from the springform pan and top with the macerated strawberries before serving.
