Method

Preparing the Catfish

    Clean the Catfish

    Thoroughly clean the whole catfish under cold running water. Remove any scales and guts if not already done by the fishmonger.

    Season the Catfish

    Rub the catfish with salt and black pepper both inside and out. Let it marinate for about 15 minutes.

    Coat the Catfish

    Dredge the seasoned catfish in cornmeal, ensuring an even coating on all sides.

    Fry the Catfish

    In a deep frying pan, heat the oil over medium-high heat. Once hot, carefully place the catfish in the oil and fry for approximately 5-7 minutes on each side, or until golden brown and cooked through. Remove from oil and drain on paper towels.

Making French Fries

    Prepare the Potatoes

    Wash and peel the potatoes. Cut them into thick strips to form fries.

    Fry the Potatoes

    In a separate frying pan, heat the oil over medium-high heat. Once hot, add the potato strips and fry for about 5-6 minutes, or until golden and crispy. Remove from oil and drain on paper towels, then sprinkle with salt.

Preparing the Slaw

    Chop the Vegetables

    Finely shred the green cabbage and carrots.

    Mix the Slaw

    In a large bowl, combine the shredded cabbage, carrots, mayonnaise, vinegar, sugar, salt, and black pepper. Toss well to combine and let sit in the refrigerator for at least 30 minutes to allow the flavors to meld.

Cooking the Vegetables

    Prepare the Vegetables

    Wash and chop the mixed seasonal vegetables into bite-sized pieces.

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add the mixed vegetables and sauté for about 5-7 minutes until tender. Season with salt to taste.
