Chicken Parmesan

Mashed Potatoes

Method

Chicken Parmesan

  1. 1

    Prepare the Chicken

Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and black pepper. Set up a breading station with three shallow dishes: one for flour, one for whisked eggs mixed with milk, and one for bread crumbs mixed with grated Parmesan cheese.

  2. 2

    Bread the Chicken

Dredge each chicken breast in flour, shaking off the excess. Dip it into the egg mixture, then coat it with the bread crumb and Parmesan mixture, pressing gently to adhere.

  3. 3

    Cook the Chicken

In a large skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook for 4-5 minutes on each side, or until golden brown. Transfer the chicken to a baking dish.

  4. 4

    Add Sauce and Cheese

Pour marinara sauce over the chicken and top with shredded mozzarella cheese. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly.

Mashed Potatoes

  1. 5

    Cook the Potatoes

In a large pot, add the peeled and cubed potatoes. Cover with water and bring to a boil. Cook for 15-20 minutes, or until tender.

  2. 6

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Slaw

  1. 7

    Prepare the Slaw

In a large bowl, combine the shredded cabbage and carrots.

  2. 8

    Make the Dressing

In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

  3. 9

    Combine

Pour the dressing over the cabbage and carrots. Toss until evenly coated. Refrigerate for at least 30 minutes before serving.

Vegetable

  1. 10

    Prepare the Vegetables

In a skillet, heat olive oil over medium heat. Add mixed vegetables and sauté for 5-7 minutes until tender.

  2. 11

    Season

Season with salt and black pepper. Stir well and remove from heat.
