Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water (1.5 cups), sugar (1 tbsp), and active dry yeast (1 tbsp). Stir gently and let sit for about 5-10 minutes until frothy.

    Mix Dough

    In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tsp). Create a well in the center and pour in the yeast mixture and vegetable oil (2 tbs). Mix until a dough begins to form.

    Knead Dough

    Turn the dough onto a floured surface and knead for 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a cloth, and let rise in a warm place for about 1 hour or until doubled in size.

Shaping and Baking

    Preheat Oven

    Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Shape Pretzel Bites

    Once the dough has risen, punch it down and turn it out onto a floured surface. Divide the dough into 8 equal pieces. Roll each piece into a rope about 1 inch (2.5 cm) thick, then cut each rope into 1-inch pieces to form pretzel bites.

    Prepare Baking Solution

    In a large pot, bring 10 cups of water to a boil. Once boiling, add baking soda (2 tbs) and stir to dissolve.

    Boil Pretzel Bites

    Carefully drop the pretzel bites into the boiling water, cooking them for about 30 seconds on each side. Remove with a slotted spoon and place on the prepared baking sheet.

    Add Toppings

    Brush the boiled pretzel bites with melted butter (4 tbs) and sprinkle with coarse sea salt (0.5 tbs).

    Bake

    Bake in the preheated oven for about 12-15 minutes or until golden brown.

    Remove the pretzel bites from the oven and let cool slightly. Serve warm with spicy mustard (1 cup) for dipping.
