Bake the Potatoes
Preheat the oven to 400°F (200°C). Scrub the Russet potatoes under cold water and dry them. Using a fork, poke several holes in each potato to allow steam to escape during cooking. Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.

Cool and Cut the Potatoes
Remove the potatoes from the oven and allow them to cool for about 10-15 minutes. Carefully slice each potato in half lengthwise. Using a spoon, scoop out the flesh, leaving about 1/4-inch of potato on the skin. Reserve the scooped-out potato for another use, if desired.

Prepare for Baking
Brush the insides of the potato skins with olive oil. Sprinkle with salt and black pepper. Place the potato skins on a baking sheet, cut side up.

Evenly distribute the shredded cheddar cheese and chopped bacon into the potato skins. Make sure to fill them generously.

Return the filled potato skins to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly, and the edges of the skins are crispy.
