Method
Preparing the Beets
- 1
Wash and Trim the Beets
Start by washing the red beets thoroughly under cold running water to remove any dirt. Trim off the greens and root tails.
- 2
Boil the Beets
Place the cleaned beets in a large pot and cover them with water. Bring to a boil, then reduce heat and simmer for about 30-40 minutes, or until tender.
- 3
Cool and Peel
Once cooked, drain the beets and allow them to cool. Once cool enough to handle, peel the skins off using your hands or a vegetable peeler.
- 4
Slice or Cube
Slice or cube the peeled beets into desired shapes and set aside.
Making the Pickling Solution
- 5
Combine Ingredients
In a medium saucepan, combine water, white vinegar, granulated sugar, and salt. Add whole cloves, cinnamon stick, and black peppercorns.
- 6
Heat the Mixture
Bring the mixture to a boil over medium heat, stirring until the sugar and salt have dissolved completely.
- 7
Optional Flavorings
If using, add the garlic cloves and bay leaves to the pickling solution.
- 8
Simmer
Reduce the heat and allow the mixture to simmer for 5-10 minutes to let the flavors meld.
Pickling the Beets
- 9
- 10
Pour the Pickling Solution
Carefully pour the hot pickling solution over the beets in the jars, ensuring the beets are completely submerged.
- 11
Seal and Store
Seal the jars with lids while still hot. Allow them to cool to room temperature before transferring to the refrigerator.
- 12
Marinate
Let the beets marinate in the refrigerator for at least 24 hours before consuming for the best flavor.
