Prepare the Beets

    Start by washing the fresh beets under cold running water to remove any dirt. Trim the greens off the beets, leaving about an inch of stem attached to prevent bleeding during cooking.

    Place the beets in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for about 30-45 minutes or until tender when pierced with a fork. The cooking time will depend on the size of the beets.

Make the Pickling Brine
