Prep the Potatoes
Peel the Russet potatoes and cut them into quarters for even cooking.

Boil the Potatoes
Place the cut potatoes in a large pot and cover with cold water. Add 1 tsp of salt and bring to a boil over high heat. Once boiling, reduce the heat to medium and let simmer until the potatoes are fork-tender, about 15-20 minutes.

Drain and Steam
Once the potatoes are tender, drain them and return them to the pot. Allow them to steam for a minute to remove excess moisture.

Mash the Potatoes
Add the butter, milk, and remaining salt to the potatoes. Use a potato masher or a hand mixer to mash until smooth and creamy. If using optional ingredients like garlic or cream cheese, add them now and mix until incorporated.

Season
Taste the mashed potatoes and add black pepper and additional salt if desired. If using chives, fold them in gently at this stage.

Transfer the mashed potatoes to a serving dish and garnish with additional butter or chives if desired. Serve hot.
