    Wash the Russet potatoes thoroughly under running water to remove any dirt. Peel the potatoes if desired, then cut them into long strips, about 1/4 inch thick to resemble French fries.

    Place the cut potatoes in a large bowl of cold water. Let them soak for at least 30 minutes. This step removes excess starch, helping the fries to become crispy when cooked.
