Chicken Strips

    Prepare the Chicken

    Cut the chicken breasts into strips about 1 inch wide.

    Set up the Breading Station

    In one bowl, place the flour mixed with salt, pepper, garlic powder, and paprika. In another bowl, beat the eggs. In a third bowl, place the breadcrumbs.

    Bread the Chicken

    Dip each chicken strip first into the flour mixture, then into the beaten eggs, and finally coat with breadcrumbs. Place the breaded strips on a baking sheet.

    Fry the Chicken

    In a large skillet, heat the vegetable oil over medium heat. Once hot, carefully add the chicken strips in batches, frying until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.

French Fries

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into fries, about 1/4 inch thick.

    Soak the Fries

    Place the cut fries in cold water for about 30 minutes to remove excess starch. Drain and pat dry.

    Fry the Fries

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 4-6 minutes. Remove and drain on paper towels, then season with salt.

Coleslaw

    Combine the Vegetables

    In a large bowl, combine the shredded cabbage and carrots.

    Make the Dressing

    In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth.

    Mix the Coleslaw

    Pour the dressing over the cabbage and carrots, and toss until everything is well coated. Refrigerate for at least 30 minutes before serving.
