Breaded Jack Salmon

Prepare the Salmon
Rinse the Jack Salmon fillets under cold water and pat them dry with paper towels.

Set up Breading Station
In three separate shallow dishes, place the all-purpose flour mixed with salt, black pepper, paprika, and garlic powder in one dish; beat the eggs in the second dish; and place the breadcrumbs in the third dish.

Bread the Salmon
Coat each salmon fillet in the flour mixture, then dip into the beaten eggs, and finally coat with breadcrumbs. Press the breadcrumbs onto the fillets to ensure they adhere well.

Cook the Salmon
In a large skillet, heat olive oil over medium heat. Once hot, add the breaded salmon fillets and cook for about 4-5 minutes on each side or until golden brown and cooked through.

Prepare the Potatoes
Peel the potatoes and cut them into thin strips to resemble French fries.

Fry the Potatoes
In a deep fryer or large pot, heat vegetable oil to 350°F (175°C). Carefully add the potato strips in batches and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.

Prepare the Vegetables
Finely shred the cabbage and carrots. Combine them in a large bowl.

Make the Dressing
In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

Combine and Chill
Pour the dressing over the cabbage and carrots, and mix well to combine. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Steam or sauté the mixed vegetables in olive oil over medium heat until tender, about 5-7 minutes. Season with salt and black pepper to taste.
