Preparation
1. Prepare the Vegetables
Finely chop the onion, bell pepper, and garlic cloves. Set aside.
2. Cook the Beef
In a skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the ground beef and cook until browned, about 5-7 minutes.
3. Add Vegetables and Seasonings
Add the chopped onion, bell pepper, and garlic to the skillet with the cooked beef. Stir in chili powder, cumin, salt, and black pepper. Cook for an additional 5 minutes or until the vegetables are tender.
Assembling and Cooking
4. Assemble the Quesadillas
Take a flour tortilla, layer with 1/2 cup of cheddar cheese, 1/4 cup of Monterey Jack cheese, and 1/4 of the beef mixture. Top with another 1/2 cup of cheddar cheese and place another tortilla on top.
5. Cook the Quesadillas
In the same skillet, add the assembled quesadilla. Cook on medium heat for about 3-4 minutes on each side until the tortillas are golden brown and the cheese is melted. Repeat with remaining tortillas and filling.
