Making the Dough
In a large mixing bowl, combine the all-purpose flour and a pinch of salt. Gradually add water and knead until you have a soft and pliable dough. Cover with a damp cloth and let it rest for 30 minutes.

Preparing the Filling
In a pan, heat a tablespoon of oil. Add cumin seeds and let them splutter. Add finely chopped onions and sauté until golden brown. Stir in ginger, green chili, turmeric powder, garam masala, and salt. Add mashed potatoes and boiled peas, mix well, and cook for another 5 minutes. Let the filling cool.

Assembling the Samosas
Divide the dough into small balls. Roll out each ball into a thin oval shape, cut it in half, and form a cone. Seal the edge with water. Fill the cone with the potato-pea mixture and seal the top by pinching the edges together.

Frying the Samosas
Heat oil in a deep frying pan. Once hot, carefully drop the samosas in batches and fry until golden brown and crispy. Remove and drain on paper towels.

Assembling the Chaat
On a serving plate, break the fried samosas into pieces. Top them with boiled chickpeas, chopped red onion, and drizzle with tamarind and coriander chutneys.

Finishing Touches
Sprinkle cumin powder, chopped coriander leaves, and lemon juice over the top. Serve the Vegan Samosa Chaat immediately, garnished with extra chutneys if desired.
