Calamari Preparation

Clean the Calamari
Rinse the fresh calamari under cold water and pat dry with paper towels. Slice the calamari into rings, about 1/2 inch thick.

Prepare the Breading
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper.

Soak in Buttermilk
Place the calamari rings into another bowl and pour in the buttermilk. Allow them to soak for at least 30 minutes.

Bread the Calamari
After soaking, remove the calamari rings from the buttermilk, allowing any excess to drip off. Dredge them in the flour mixture until well coated.

Heat the Oil
In a large, heavy pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Calamari
Fry the coated calamari rings in batches for about 2-3 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasoning
Add the canned crushed tomatoes, red pepper flakes, oregano, salt, and black pepper. Stir to combine.

Simmer the Sauce
Reduce heat to low and let the sauce simmer for about 20 minutes, stirring occasionally. Add the chopped fresh basil just before serving.
