Method

Cooking Pasta

    Boil Water

    In a large pot, bring salted water to a boil over high heat.

    Cook Pasta

    Add the pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain Pasta

    Once cooked, drain the pasta in a colander and set aside. Reserve 1/2 cup of the pasta water.

Sautéing Vegetables

    Prepare Vegetables

    While the pasta is cooking, wash and chop the bell pepper, zucchini, carrot, and broccoli into bite-sized pieces.

    Heat Olive Oil

    In a large skillet, heat the olive oil over medium heat.

    Sauté Garlic and Vegetables

    Add minced garlic to the skillet and sauté for about 1 minute until fragrant. Then, add the chopped vegetables (bell pepper, zucchini, carrot, broccoli) and cook for 5-7 minutes until they are tender but still crisp.

    Add Spinach and Tomatoes

    Stir in the cherry tomatoes and spinach, cooking until the spinach is wilted, about 2-3 minutes.

Making the Sauce

    Add Broth

    Pour in the vegetable broth and bring to a simmer.

    Combine with Pasta

    Add the cooked pasta to the skillet, tossing gently to combine with the vegetables and sauce.

    Season

    Add salt, black pepper, red pepper flakes, and reserved pasta water as needed to achieve desired consistency. Stir well.

    Add Cheese

    Remove from heat and stir in the grated Parmesan cheese until melted and well combined.

Serving

    Plate and Serve

    Serve the Pasta Primavera warm, garnished with additional Parmesan cheese and fresh herbs if desired.
