Method
For the Falafel
- 1
Prepare the Falafel Mixture
In a food processor, combine canned chickpeas, parsley, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Blend until the mixture is coarsely ground but not pureed.
- 2
Form the Falafel Balls
Scoop out the falafel mixture and form small balls or patties using your hands. Place them on a plate and refrigerate for at least 30 minutes.
- 3
Fry the Falafel
Heat oil in a frying pan over medium heat. Fry the falafel in batches until they are golden brown and crispy, about 3-4 minutes on each side. Drain on paper towels.
For the Hummus
- 4
Blend the Hummus Ingredients
In a blender or food processor, combine canned chickpeas, tahini, lemon juice, garlic, olive oil, salt, and water. Blend until smooth, adding more water if necessary for desired consistency.
For the Salad
- 5
For the Roti
- 6
Make the Roti Dough
In a large bowl, mix whole wheat flour and salt. Gradually add warm water and oil, kneading until a soft dough forms. Cover and let it rest for 30 minutes.
- 7
Cook the Roti
Divide the dough into small balls, roll each ball into a thin circle on a floured surface. Cook on a hot skillet for 1-2 minutes on each side until puffed and golden.
For the Sauce
- 8
Prepare the Sauce
In a bowl, mix vegan yogurt, sriracha sauce, and lemon juice until well combined.
Assembling the Kati Roll
- 9
Assemble the Roll
On a cooked roti, spread a generous amount of hummus, add 3-4 falafel balls, top with the fresh salad, and drizzle with the prepared sauce. Wrap the roti around the filling and serve warm.
