Falafel Preparation

In a food processor, combine the chickpeas, parsley, cilantro, garlic, cumin, coriander, baking powder, flour, salt, and pepper. Blend until a coarse mixture forms. Avoid over-blending to retain some texture.

Transfer the falafel mixture to a bowl and refrigerate for at least 30 minutes to firm up.

Heat olive oil in a frying pan over medium heat. Shape the chilled mixture into small balls or patties.

Fry each falafel for 3-4 minutes on each side or until golden brown and crispy. Drain on a paper towel.

In a large bowl, combine cooked quinoa, mint, diced tomatoes, diced cucumber, lemon juice, olive oil, salt, and pepper. Toss to combine thoroughly.
Pickled Onions Preparation

In a small saucepan, combine white vinegar, sugar, salt, and water. Bring to a boil over medium heat.
