    Prepare the Vegetables

    Wash the cayenne peppers, carrots, and onion thoroughly under cold water. Remove the stems from the cayenne peppers and habanero peppers if using. Peel the garlic cloves and carrots. Chop the onion, carrots, and garlic into small pieces for easier blending.

    Blend the Ingredients

    In a blender or food processor, add the chopped cayenne peppers, garlic, carrots, onion, and optional habanero peppers. Pour in the white vinegar and blend until the mixture is smooth and well combined.

Cooking

    Cook the Mixture

    Transfer the blended mixture to a saucepan. Add salt, sugar, and optional black pepper and smoked paprika if desired. Bring the mixture to a simmer over medium heat, stirring occasionally. Let it cook for about 10-15 minutes until it thickens slightly.

    Add Lime Juice

    If using, stir in the lime juice just before removing the sauce from the heat. This will enhance the flavor and add a zesty kick.

Bottling

    Cool and Bottle the Sauce

    Remove the saucepan from heat and allow the hot sauce to cool for a few minutes. Pour the sauce into sterilized bottles or jars, seal tightly, and store in the refrigerator.
