Yogurt Sauce

Method

Prepare Samosas

  1. 1

    Make Dough

In a mixing bowl, combine all-purpose flour and salt. Gradually add water and knead to form a smooth dough. Cover with a damp cloth and set aside for 30 minutes.

  2. 2

    Prepare Filling

In another bowl, mix mashed potatoes, cooked green peas, cumin seeds, garam masala, coriander powder, red chili powder, lemon juice, and chopped cilantro. Mix well.

  3. 3

    Shape Samosas

Divide the dough into small balls. Roll each ball into a circle, cut it in half, and form a cone. Fill with the potato mixture, seal the edges, and deep fry until golden brown.

Prepare Chickpea Mixture

  1. 4

    Mix Ingredients

In a bowl, combine canned chickpeas, chopped onion, cumin powder, chili powder, salt, and chopped cilantro. Mix thoroughly and set aside.

Prepare Tamarind Chutney

  1. 5

    Cook Chutney

In a saucepan, combine tamarind paste, jaggery, water, and black salt. Cook over low heat until the jaggery dissolves. Allow to cool.

Prepare Yogurt Sauce

  1. 6

    Mix Yogurt Sauce

In a bowl, mix plain yogurt, cumin powder, salt, and chopped mint. Stir until well combined.

Assemble Samosa Chaat

  1. 7

    Layer Ingredients

Crush the fried samosas on a plate. Top with the chickpea mixture, drizzle with tamarind chutney and yogurt sauce. Garnish with extra chopped cilantro, if desired.
