    Begin by rinsing the Arborio rice under cold water until the water runs clear. This removes excess starch and prevents the pudding from becoming too thick.

    In a large saucepan, combine the rinsed rice, whole milk, sugar, salt, ground cardamom, and butter. Stir to mix all the ingredients well.

Cooking

    Cook the Rice

    Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring frequently to prevent the rice from sticking to the bottom of the pan.

    Reduce the heat to low and continue to simmer for about 30-40 minutes, stirring occasionally. Cook until the rice is tender and the mixture thickens to a creamy consistency.
