Cooking the Rice

Cook the Brown Rice
In a medium-sized pot, combine 1 cup of brown rice and 2 cups of vegetable broth. Bring to a boil over high heat.

Once boiling, reduce the heat to low, cover, and simmer for about 40-45 minutes, or until the rice is tender and the liquid is absorbed.

Remove from heat and let it sit covered for 5-10 minutes.

Sauté the Vegetables
While the rice is cooking, heat a large skillet over medium heat. Add a drizzle of oil, then add the chopped onion and minced garlic.

Sauté for 3-4 minutes until the onion becomes translucent.

Add the diced red bell pepper and corn to the skillet. Cook for an additional 5 minutes, stirring occasionally.

Stir in the rinsed red kidney beans, cumin, paprika, chili powder, salt, and black pepper. Cook for another 5 minutes until heated through.
