Preparing the Fries

Peel and Cut Potatoes
Peel the potatoes and cut them into evenly sized fries, about 1/4 inch thick.

Soak the Fries
Place the cut fries in a bowl of cold water and soak them for at least 30 minutes. This helps to remove excess starch and makes them crispier.

Drain and Dry
After soaking, drain the fries and pat them dry using a clean kitchen towel or paper towels.
Frying the Fries

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C).

Fry the Potatoes
Carefully add the fries to the hot oil in batches, making sure not to overcrowd the pot. Fry them until they are golden brown and crispy, about 4-5 minutes.

Drain the Fries
Using a slotted spoon, remove the fries from the oil and drain them on paper towels. While they are still hot, sprinkle them with salt.
Preparing the Mirchi Masala Blend

Mix the Spices
In a small bowl, combine the red chili powder, cumin powder, coriander powder, garam masala, amchur, and black salt. Mix well to ensure even distribution of the spices.

Add Lemon Juice
Drizzle the lemon juice over the spice mix and stir until you have a paste-like consistency.
Tossing the Fries

Combine Fries and Masala
In a large mixing bowl, add the hot, drained fries and the prepared Mirchi masala blend. Toss gently until all fries are evenly coated with the spice mixture.
