Preparing the Tea

Boil Water
In a large saucepan, bring 4 cups of water to a rolling boil over high heat.

Add Tea and Spices
Once the water is boiling, add 4 tablespoons of black tea leaves, 6 whole cardamom pods, 3 whole cloves, 1 whole cinnamon stick, and a 1-inch piece of ginger (sliced or crushed).

Simmer
Reduce the heat to medium and let the mixture simmer for about 10 minutes, allowing the flavors to infuse.

Add Sugar
Stir in 2 tablespoons of sugar, adjusting to taste, and continue to simmer for another 5 minutes.

Heat Through
Increase the heat slightly and bring the tea back to a gentle boil, stirring occasionally. Allow it to boil for about 5 minutes.
Straining and Serving

Strain the Tea
Remove the saucepan from heat and strain the tea mixture through a fine mesh sieve into cups or a teapot, discarding the solids.

Serve the karak chai hot, garnished with a sprinkle of ground cardamom if desired.
