Prepare the Rice

    In a medium saucepan, combine basmati rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the rice is tender and water is absorbed. Remove from heat and let sit covered for 5 minutes, then fluff with a fork.

Cook the Gyro Meat

    Prepare the Gyro Meat Mixture

    In a large bowl, combine ground lamb or beef, minced garlic, grated onion, ground cumin, ground coriander, dried oregano, salt, and black pepper. Mix well until fully incorporated.

    Cook the Gyro Meat

    In a skillet, heat olive oil over medium heat. Add the meat mixture, breaking it apart with a spatula. Cook for about 8-10 minutes, or until the meat is browned and cooked through. Stir occasionally to ensure even cooking.

Make the Tzatziki Sauce

    Prepare Tzatziki Sauce

    In a bowl, mix together Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, and salt. Stir until well combined. Refrigerate until ready to serve.

Assemble the Gyro Rice Bowl

    In a serving bowl, layer the cooked rice as the base. Top with the cooked gyro meat, halved cherry tomatoes, sliced red onion, crumbled feta cheese, and a drizzle of tzatziki sauce. Garnish with fresh parsley.
