Falafel Preparation

    Prepare the Falafel Mixture

    In a food processor, combine the canned chickpeas, parsley, cilantro, garlic, onion, cumin, coriander, baking powder, flour, salt, and pepper. Pulse until a coarse mixture forms. Transfer to a bowl and refrigerate for 30 minutes.

    Fry the Falafel

    In a large skillet, heat vegetable oil over medium heat. Form the falafel mixture into small balls or patties and fry until golden brown on each side, about 3-4 minutes per side. Drain on paper towels.

Hummus Preparation

    Make the Hummus

    In a food processor, blend the canned chickpeas, tahini, lemon juice, garlic, olive oil, salt, and water until smooth. Adjust the consistency with more water if needed.

Chopped Salad Preparation

    Prepare the Salad

    In a bowl, combine diced tomato, cucumber, red onion, lemon juice, olive oil, salt, and parsley. Toss to combine and set aside.

Roti Preparation

    Make the Roti Dough

    In a mixing bowl, combine all-purpose flour, water, and salt. Knead for about 5 minutes until smooth. Let rest for 30 minutes covered with a damp cloth.

    Cook the Roti

    Divide dough into small balls and roll each ball into a thin circle. Cook on a hot skillet for about 1-2 minutes on each side until lightly browned.

Assembly

    Assemble the Kati Roll

    Spread a generous layer of hummus on each warm roti. Add a few falafel, a handful of mixed greens, and a scoop of the chopped salad. Roll tightly and serve immediately.
