Prepare the Base
Choose one of the bases: Rinse 1 cup of quinoa or brown rice under cold water. If using quinoa, cook it in 2 cups of water over medium heat for about 15 minutes or until water is absorbed. For brown rice, cook 1 cup in 2 cups of water for about 40-45 minutes. If using mixed greens, simply rinse and dry them.

Cook the Protein
For grilled chicken, season 1 cup of chicken breast with salt and pepper, grill on medium-high heat for about 6-7 minutes per side until fully cooked. For tofu, press and drain, then cube and sauté in a pan with olive oil over medium heat for 5-7 minutes until golden brown. For chickpeas, drain and rinse canned chickpeas, and optionally sauté in a pan with spices for 5 minutes.

Assemble the Bowl
In a bowl, start with the base (quinoa, brown rice, or mixed greens). Add 1 cup of your chosen protein on top. Layer with your desired toppings: half an avocado (sliced), 1 cup of cherry tomatoes (halved), 1 cup of cucumbers (sliced), 1 cup of shredded carrots, and 0.5 cup of feta cheese.

Add the Sauce
Drizzle your choice of sauce over the bowl: 0.5 cup of tahini dressing, 0.5 cup of balsamic vinaigrette, or a teaspoon of sriracha sauce for a kick.
