Prepare the Rice

    Rinse the Rice

    In a fine mesh sieve, rinse the basmati rice under cold water until the water runs clear.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice and water. Bring to a boil over high heat, then reduce to low heat, cover, and simmer for about 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Make the Chickpea Masala

    Sauté Aromatics

    In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and grated ginger, cooking for another 2 minutes.

    Add Spices and Tomato Paste

    Add the tomato paste, ground cumin, ground coriander, turmeric powder, and garam masala to the skillet. Stir well to combine and cook for about 2 minutes, allowing the spices to become fragrant.

    Incorporate Chickpeas and Coconut Milk

    Add the canned chickpeas (drained and rinsed) and coconut milk to the skillet. Stir to combine and bring the mixture to a gentle simmer. Season with salt and black pepper. Cook for an additional 10 minutes until heated through.

    Finish with Cilantro

    Stir in the chopped cilantro and remove from heat.

Assemble the Bowl

    In serving bowls, layer the cooked basmati rice at the bottom. Top with the chickpea masala. Garnish with avocado slices and serve with lemon wedges on the side.
