Prepare the Dough
In a mixing bowl, combine all-purpose flour and salt. Gradually add water and knead until a soft, smooth dough forms. Cover the dough with a damp cloth and let it rest for 30 minutes.

Roll and Cook Parathas
After resting, divide the dough into equal portions. Roll each portion into a ball, then flatten it into a disc. Heat a skillet over medium heat and add a little ghee or oil. Cook each paratha for about 2-3 minutes on each side until golden brown and flaky. Set aside.

Sauté Aromatics
In a large pan, heat a tablespoon of oil over medium heat. Add the chopped onions and sauté until they are translucent. Add the minced garlic, grated ginger, and chopped green chili, cooking for another minute until fragrant.

Add Tomatoes and Spices
Add the chopped tomatoes, ground cumin, ground coriander, turmeric powder, and salt. Cook until the tomatoes soften and release their juices, about 5-7 minutes.

Incorporate Chickpeas
Add the canned chickpeas to the mixture, along with a splash of water if needed. Stir well to combine. Let the mixture simmer for 10-15 minutes, allowing the flavors to meld together.

Finish the Filling
Stir in the garam masala, chopped cilantro, and lemon juice. Taste and adjust seasoning if necessary. Remove from heat.
Assembling the Kati Roll

Wrap the Filling
Take a warm paratha and place a generous amount of the chickpea masala filling in the center. Roll the paratha tightly around the filling, folding in the sides to secure it.
