Prepare the Chicken
Cut the chicken breasts into strips about 1 inch wide.

Bread the Chicken Strips
Dip each chicken strip first into the flour, then into the beaten eggs, and finally coat with breadcrumbs. Ensure each strip is fully covered.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it shimmers.

Fry the Chicken
Carefully place the breaded chicken strips into the hot oil, cooking in batches if necessary. Fry for about 4-5 minutes on each side, or until golden brown and cooked through.

Drain and Keep Warm
Remove the chicken tenders from the oil and place them on a plate lined with paper towels to drain excess oil. Keep warm in an oven set to low.

Wash and peel the russet potatoes. Cut them into thin strips (about 1/4 inch thick).
