Method

Marinate the Chicken

    Prepare the Marinade

    In a large bowl, combine yogurt, ginger paste, garlic paste, red chili powder, turmeric powder, garam masala, lemon juice, and salt. Mix well.

    Marinate the Chicken

    Cut the chicken breast into thin strips and add it to the marinade. Ensure all pieces are well-coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Make the Roti

    Prepare the Dough

    In a mixing bowl, combine all-purpose flour and salt. Gradually add water and knead until a soft dough forms. Add oil and knead again until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Cook the Roti

    Divide the dough into equal-sized balls. Roll each ball into a thin circle on a floured surface. Heat a skillet over medium heat and cook each roti for about 1-2 minutes on each side until golden brown and slightly puffed.

Cook the Chicken

    Heat oil in a skillet over medium-high heat. Add the marinated chicken and cook for about 7-10 minutes, stirring occasionally, until the chicken is fully cooked and has a nice char.

Assemble the Kati Roll

    Finely slice the onion and chop the cilantro. Set aside.

    Take a cooked roti, place a portion of the cooked chicken in the center. Add sliced onions, cilantro, and a squeeze of lemon juice. Roll it up tightly and serve warm with green chilies on the side.
