    Prepare the fillings

    In a skillet over medium heat, cook the chorizo until browned, about 5-7 minutes. In a separate pot, reheat the pork carnitas until warmed through. If using burnt ends, ensure they are warmed and cut into bite-sized pieces.

    Heat tortillas

    In a dry skillet, warm each corn tortilla for about 30 seconds on each side until pliable. Alternatively, you can microwave them for about 15-20 seconds covered with a damp paper towel.

Assembly

    Assemble the tacos

    On each warmed tortilla, add approximately 1/4 cup of your chosen filling (pork carnitas, chorizo, or burnt ends).

    Add toppings

    Top each taco with a generous sprinkle of queso fresco, followed by a spoonful of tomatillo salsa and pico de gallo.

    Serve with sides

    Plate the tacos alongside refried beans and Mexican rice for a complete breakfast experience.
