Toppings
Method
Prepare the Stuffing
- 1
Make the Whipped Mascarpone
In a mixing bowl, combine the mascarpone cheese, heavy cream, caramel sauce, and powdered sugar. Using a hand mixer or whisk, whip until light and fluffy. Set aside in the refrigerator to chill.
Prepare the French Toast
- 2
Mix the Egg Mixture
In a shallow bowl, whisk together the eggs, whole milk, vanilla extract, and ground cinnamon until well combined.
- 3
Dip the Challah
Take each slice of challah and dip it into the egg mixture, ensuring both sides are well coated. Let any excess drip off.
- 4
Cook the French Toast
In a large skillet, melt the butter over medium heat. Once melted, add the dipped challah slices and cook for 3-4 minutes on each side, or until golden brown and cooked through.
Assemble and Serve
- 5
Stuff the French Toast
Once the French toast is cooked, carefully slice each piece horizontally to create a pocket. Fill each pocket generously with the whipped mascarpone mixture.
- 6
Add Toppings
Top the stuffed French toast with fresh mixed berries, drizzle with caramel sauce, and serve with crème anglaise on the side.
