Prepare the Pasta

Boil the Water
In a large pot, bring 4-5 liters of salted water to a rolling boil.

Cook the Spaghetti
Add the spaghetti to the boiling water and cook according to the package instructions until al dente, usually about 8-10 minutes.

Reserve Pasta Water
Before draining the spaghetti, reserve about 1 cup of the pasta cooking water, then drain the spaghetti.
Prepare the Sauce

Cook the Pancetta
In a large skillet over medium heat, add the diced pancetta or guanciale and cook until crispy, about 4-5 minutes.

Mix Eggs and Cheese
In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.
Combine and Serve

Combine Pasta and Pancetta
Add the drained spaghetti to the skillet with the crispy pancetta. Toss to combine and remove from heat.

Add Egg Mixture
Quickly pour the egg and cheese mixture over the hot pasta, tossing rapidly to create a creamy sauce. If needed, add reserved pasta water a little at a time to achieve the desired consistency.

Serve
Plate the spaghetti carbonara immediately and garnish with extra grated Parmesan and black pepper, if desired.
