    Chop the Vegetables

    Wash, peel, and chop the carrots, potatoes, celery, zucchini, and onion into small, uniform pieces. Mince the garlic cloves.

    Prepare the Spinach

    Rinse the spinach leaves under cold water and set aside to drain.

Cooking

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent.

    Add Vegetables

    Add the chopped carrots, potatoes, celery, and zucchini to the pot. Stir and cook for an additional 5 minutes.

    Add Broth and Seasonings

    Pour in the vegetable broth and add the salt, black pepper, thyme, and bay leaf. Bring the mixture to a boil.

    Simmer the Soup

    Once boiling, reduce the heat to low and let the soup simmer for 20 minutes, or until the vegetables are tender.

    Stir in the spinach and let it cook for another 5 minutes until wilted.
