Marinade and Seasoning

Method

Preparation of Marinade

  1. 1

    Make the Marinade

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, black pepper, and fresh dill until well combined.

Marinating the Salmon

  1. 2

    Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over the top. Ensure the fillets are evenly coated. Cover and refrigerate for at least 30 minutes.

Preparing the Vegetables

  1. 3

    Prepare the Vegetables

Wash the asparagus, bell pepper, and zucchini. Cut the bell pepper into strips and slice the zucchini into rounds. Set aside.

Grilling

  1. 4

    Preheat the Grill

Preheat your grill to medium-high heat.

  2. 5

    Grill the Salmon

Remove the salmon from the marinade and place it on the grill. Cook for about 5-6 minutes on each side, or until the salmon flakes easily with a fork.

  3. 6

    Grill the Vegetables

While the salmon is grilling, place the vegetables on the grill. Grill for about 4-5 minutes, turning occasionally, until they are tender and have grill marks.

Serving

  1. 7

    Plate and Serve

Once cooked, remove the salmon and vegetables from the grill. Plate the salmon with a side of grilled vegetables and serve immediately.
