Roasting Vegetables

    Prepare the Vegetables

    Preheat your oven to 425°F (220°C). In a bowl, combine broccoli florets, halved Brussels sprouts, and chopped grilled artichoke hearts. Drizzle with 1 tablespoon of olive oil, season with salt and black pepper, and toss to coat evenly.

    Roast the Vegetables

    Spread the vegetable mixture onto a baking sheet in a single layer. Roast in the preheated oven for about 20 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.

Preparing Poached Eggs

    Poach the Eggs

    In a saucepan, bring water to a gentle simmer. Crack each egg into a small bowl, then gently slide them into the simmering water. Poach for about 3-4 minutes or until the whites are set but yolks remain runny. Remove with a slotted spoon and set on a plate.

Making Hollandaise Sauce

    Prepare Hollandaise

    In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler method) and whisk constantly until the mixture thickens. Gradually add melted unsalted butter while whisking continuously until the sauce is smooth and creamy. Stir in salt and cayenne pepper.

Assembling the Benny

    Toast the Muffins

    While the hollandaise is being made, split and toast the English muffins until golden brown.

    Assemble the Dish

    On each toasted English muffin half, layer the roasted vegetables and fresh spinach. Top each with a poached egg and drizzle generously with hollandaise sauce.

    Serve immediately while warm, garnished with additional black pepper if desired.
