Prepare the Batter

Melt the Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.

Whisk Eggs and Sugar
In a separate bowl, whisk together the granulated sugar and large eggs until the mixture is pale and slightly thickened, about 2-3 minutes.

Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture, whisking constantly to prevent the eggs from cooking. Add in the vanilla extract and a pinch of salt, mixing well.

Fold in Flour
Sift the all-purpose flour into the chocolate mixture and gently fold it in using a spatula until just combined. Be careful not to overmix.
Bake the Cakes

Preheat Oven
Preheat your oven to 425°F (220°C).

Prepare Ramekins
Grease 4 ramekins with butter and dust with cocoa powder to ensure easy release after baking. Place them on a baking tray.

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Bake
Bake in the preheated oven for about 12-14 minutes, or until the edges are firm but the center is still soft. The tops should look set and slightly cracked.

Cool and Serve
Let the cakes cool for 1 minute. Run a knife around the edges to loosen them, then invert onto serving plates.

Dust the warm lava cakes with powdered sugar. Serve immediately with a scoop of vanilla ice cream and fresh berries, if desired.
